2x4 modified to one wheel drive?

You can do that and your on-pavement performance will be much improved. Off
pavement, not so much. Never off pavement, then go for it.
Golf carts, electric or gas, often have rear diffs already. Can't you use the original
axle and rear end with your Suzy motor?
There is only one ATV I have found that comes with a rear differential: the 86-04
Kawasaki Bayou 300 4x2. They are uniquely suited to pavement use, and come
with a lever to lock it for off-road use.
You can also buy a lawn tractor rear axle with diff pretty cheap.

The quad axel appears to have a differential just like a mini version of a car or truck.
Not sure how to modify now. Tried to get drivers side axel off, but couldn't get axel nut off or the axel housing from the dif to the hub. Got bolts out, but it would budge off the dif.
Mostly offroad very little pavement.

these are "solid axle" or "live axle" vehicles. A differential has spider
gears so that the 2 rear wheels can turn at different rates. That
also means you would have 2 half-shafts, and you don't.
No way to go one-wheel-drive with the LT250 axle-supported wheels.
Thought you might use the golf cart suspension and diff.
