First, do you need a sport quad or a utility???? Hint...sport quads are way more fun.....

The 250cc class is a good place to start. For sport quads I would look at the Yamaha Raptor 250 or the Honda 300EX. If you ride a lot in the wet and/or need higher ground clearance, then the Honda 250EX.

If you need a utility (big fenders for mud protection or racks to carry stuff), then I highly recommend the Honda Recon. Keep in mind that it is 2 wheel drive. Also, the 250EX is based on the Recon, and will go anywhere the Recon will plus it is 50 pounds lighter, so you aren't giving up any trail worthiness with the EX.

Go to the dealership and sit on them and see how they fit you.

Exactly. 250cc's should do everything that you need - at least for several years.
