I don't carry much myself but we divide the load among the utilities in the group. Its probably not as bad as the Alaskan wilderness but breaking down on the river sixty miles from home is no fun. Our list is pretty similar to Outrage's, just divided among roughly ten bikes.

Where I ride (Alaska) if you break down you're in a lot of trouble so I carry just about everything.

Small tool bag (came with the ATV)
A few extra tools
Extra gas
Extra oil
Tow strap
Extra buggies
Tire repair kit (plugs)
Air compressor
Lighter/water proof matches
Tarp
Knife
Small grill
Self-lighting charcoal
Small cooler
Flashlight
Camera
GPS
Extra batteries
Extra water and/or Gatorade
Binoculars
Toilet paper
Wet wipes
First aid kit
Hanker chiefs for dust
Helmet
Gloves
Goggles
Cell phone
Fishing Rod & tackle
Gortex jacket & pants
Towel
Chain & Lock
I keep most things in waterproof bags just in case. I'm sure I'm forgetting a few things but this is a good start.

I know my list may sound like a lot but it's not that bad. Check out my PICs. All this stuff easily fits in my back rack bag with plenty of room for other stuff.

My quad doesn't carry anything but me... my cousin (Riding buddy) carries a tow strap and a small tool bag, thats it

I carry most of my tools in my back pack. 4 spark plugs & wrench, Tire plug kit, can of Fix a flat
4 in 1 screw driver, Channel locks, water & candy for a quck boost of energy for me I would carry more but its already heavy. The quad has the basic tool kit. Useless tool kit.

I've got a tow strap, short piece of chain with hooks and a tire repair kit.
I am thinking of making up some jumper cables for jump starting.
